Carrot cake is one of our favourite treats and so we had to make this one.

Carrot ice cream!? Just close your eyes and dream of the lovely sweet cake, but this time as an indulgent ice cream, spiced with heavenly nutmeg and cinnamon, with crunchy walnut bits and succulent sultanas. You’d swear you were eating a scrummy carrot cake, except this one is cool and creamy without any added sugars! It’s also a dairy free, wheat free recipe with lots of nutritious goodness, including 59% of your daily GDA of vitamin A in two scoops! Wow, that’s a sight for sore eyes!

Please note: we use sweeteners from natural origins including Stevia and polyols, which occur naturally and have been in use for over 100 years. Xylitol is one of them which is used in chewing gums and toothpaste and many diabetic friendly sweets and treats. Xylitol is actually produced in our bodies every day yet it is NOT SUITABLE FOR DOGS. Different mammals have different metabolisms, and in dogs it can cause a blood sugar crash and other serious issues. Whilst it is well known that chocolate is not suitable for dogs, xylitol is not yet as widespread so knowledge of this may be less common.
